The Bikini Cocktail

Serves 10 servings

To make the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Place the listed ingredients into a pot, heat until it reaches a gentle boil, agitating so the sugar melts. After that, turn off the heat allowing it to cool down entirely. Transfer into a clean bottle, close it keeping it in the fridge, where it will keep for about one month.

Preparing the Batch Mix: Pour all the liquid ingredients into a large bottle, leave to sit for one hour, then filter it best through cheesecloth, making it completely strained.

For serving: Pour 85ml of your cocktail base into a mixing glass filled with ice, and stir gently for one minute to chill. Strain into a frosted cocktail glass or similar, garnish with the cranberries and complete it with a quick spritz of the essential oil above the glass.
